| Domaine Thomas Sancerre Cuvee Ultimus |
The vines are between 50 and 70 years old and, because of their age, produce only 25 to 30 hectolitres per hectare. It is this vineyard site that is responsible for the bottling of the cuvée Ultimus. At harvest, the fruit is picked by hand, carried to the winery in small baskets, and emptied directly into the press. This fruit is picked at extreme maturity, with the deep golden color comes from the ripeness of the skins. Half of this cuvée is vinified in cask, where it remains for roughly a year. This is a special bottling that is worth seeking out. |
